Marilena Dasenaki

Marilena Dasenaki is an Assistant Professor of Food Chemistry at the Department of Chemistry, National and Kapodistrian University of Athens (NKUA). She holds a Ph.D. in Analytical Chemistry (2015) and a BSc in Chemistry from NKUA. Following her doctoral studies, she worked as a postdoctoral researcher in Analytical Chemistry at NKUA (2015–2021), building extensive expertise in advanced mass spectrometry and its applications in food research. Her research is strongly focused on food metabolomics and metabolomic profiling, employing high-resolution mass spectrometry (HRMS) combined with advanced chemometric and multivariate data-analysis approaches to investigate complex food systems. Her work encompasses the comprehensive characterization of food composition and metabolic fingerprints, with applications in food authenticity, quality assessment, nutritional characterization and the investigation of compositional changes associated with food processing. In parallel, she develops and applies advanced LC-MS, LC-HRMS and GC-MS methodologies for the identification and determination of food contaminants, residues and other food constituents.
